Farmhouse Fruit Cake
125g soft margarine.
125g soft brown sugar.
1 rounded tbsp. jam, any variety
3 large eggs.
250g self raising flour.
1-2 tbsps. milk
2tsps mixed spice
300g Mixed Fruit

Method:
Grease & baseline an approx. 7"/ 18cms round cake tin. Cream together margarine & sugar, and add eggs with a little flour. Fold in the rest of the flour, fruit & jam. Add milk if necessary to give a dropping consistency. Turn into prepared tin. Bake in moderate oven 160c /Gas 3. for approx. 1hr 10mins

1 small cooking apple,peeled, cored & roughly chopped,


Method:

Prepare a 2lb Loaf Cake Tin. Preheat oven to Gas 4, 170/180C. Put margarine,sugar ,eggs, flours & salt into a mixing bowl & whisk until well combined. Add apples , walnuts & dates. Finally, add the milk, mix well & place in tin. Bake for approx. 1 hour until cake feels springy..
