A Carrot Cake - set recipe Class 1 – Carrot Cake
Cake Ingredients –
225g self-raising flour
1 level teaspoon baking powder
1 teaspoon mixed spice
150g light brown sugar
50g chopped walnuts
100g carrots (washed, trimmed, and coarsely grated)
2 x large eggs
150ml sunflower oil
Topping Ingredients –
50g softened butter
50g full fat cream cheese
150g icing sugar
½ teaspoon vanilla extract
Walnuts to decorate
Line and grease a deep cake tin – approx. 20cm diam – with baking paper
Preheat oven to 180C/Fan 160C/Gas Mark 4
Method –
In a large bowl sift together the flour and baking powder and mixed spice. Stir in the sugar. Add the chopped nuts and grated carrot and mix lightly.
Make a well in the centre, add the eggs and oil and beat until it is thoroughly mixed.
Pour the mixture into the cake tin and place in preheated oven for approx. 1 - 1 ¼ hours, (test with a skewer) or until golden brown and shrinking from the sides of the tin.
Once baked, remove from tin, remove paper and leave to cool.
Topping –
Place all ingredients in a bowl and mix thoroughly. Spread evenly over the top of the cake. Decorate with walnuts. Leave to harden slightly in a cool place and display on a plate.
