Description:

Ingredients
60g butter
1 tablespoon golden syrup
45g porridge oats
40g desiccated coconut
75g plain flour
60g caster sugar
25g brown sugar
½ teaspoon bicarbonate of soda
1 tablespoon water

Method
• Place butter and golden syrup in a bowl and microwave and heat until melted (approximately 60-90 seconds). Leave to cool for about 15 minutes.
• Put oats, coconut, flour, caster sugar and brown sugar in a bowl together.
• Mix bicarbonate of soda in small dish with 1 tablespoon of water.
• When butter is cool, add the bicarb mix, and then stir into the dry ingredients.
• Place scoops of mixture onto a baking tray, leaving at least 2cm between them.
• Bake in oven at 180° (160° fan) for 8-10 minutes until golden.
• Leave on tray to cool for 5 minutes before transferring to wire rack to cool completely.
